When you don't feel like cooking....
There are evenings, especially after a long work week, that I don’t feel like cooking. I’m sure you’ve had these nights too. It’s popcorn and movie night! Popcorn when it’s made the right way is not bad for you at all, so if you like popcorn like I do, then I’m encouraging you to treat yourself to a night off. I make my popcorn the old fashioned way, popped over the stove. I don’t like using microwave popcorn due to all the chemicals inside of the bag, and instead, I use organic popcorn that I buy in the bulk section of my local Coop and place it in a pot with organic coconut oil on high heat. Coconut oil is so much better for the body than seed oils. Once popped, I top it with melted butter and sea salt. You can add anything you want to your popped corn, like parmesan cheese, brewer’s yeast (if you want an extra measure of healthiness with lots of B vitamins), balsamic vinegar, chile powder, etc. Feel free to be creative with your toppings, but I’m a purist and prefer plain ‘ol butter and sea salt.
