Sublime Chocolate Mousse - Quick and Easy
When you want a dessert that is sure to be a “wow”, incredibly rich and delicious and can be visually stunning in the delivery, this is it! And the best part is that it is super easy and quick to make. I’ve been making this dessert for many years from an old Gourmet magazine recipe and it has never failed to impress.
In a food processor, blend 6 oz of semisweet chocolate chips and 1/3 cup of hot coffee. Don’t use espresso as it will overpower the chocolate. Once the chocolate is melted, add 2 eggs and 1 T of rum (optional). Blend until smooth. In a chilled bowl, whip 2 cups of heavy whipping cream until it holds stiff peaks and fold half of it into the chocolate mixture, saving the other half to put on top of the mousse. Transfer the dessert to your favorite glasses and top with more whipped cream. As you can see from the above, I like to use martini glasses for an elegant touch. Sometimes I serve the chocolate mousse with a cookie on the side, or crumbled amaretto cookies on top, or shavings of chocolate. Above a dried rose petal adorns the chocolate. Serves 4-6, depending on the size of your serving.
