Seriously Fabulous Fudge
I have been making fudge every year at Christmas time for decades and quite seriously, everyone who tastes it says it's the best fudge they have ever eaten. For the first time ever, I am sharing my recipe with you.
3 1/2 cups of semi-sweet chocolate chips (I like to use Ghirardelli)
1/2 pound of butter
2 cups chopped walnuts
pinch of salt
I pint of marshmallow creme
1 t. vanilla
4 1/2 cups sugar
1 can evaporated milk
Line a 8 1/2 x 11 inch pan with buttered parchment paper or buttered aluminum foil. Pour milk in heavy pot on medium/medium high heat and add sugar. I like to use a heavy non stick pot which makes for easier clean up. Caution, scorches easily. Stir occasionally before it comes to a boil and when at boiling point, stir constantly for 9-10 minutes. Now for the part that I believe makes this fudge so special. While I am stirring the fudge, I am praying that every person who takes a bite of the fudge will feel love and joy in their hearts from eating the fudge. When the boiling mixture has been stirred for 10 minutes, turn the heat down to low and add each of the remaining ingredients one at a time, starting with the butter and vanilla. Stir until it is all blended in, then add the marshmallow creme and continuing to stir until it is all absorbed. Now add the chocolate chips, stirring until fully blended and then finally add the chopped walnuts. Pour into your pan and refrigerate for several hours or overnight before cutting. To cut, I take out a large wooden cutting board and turn the pan upside down so the fudge slides out onto the board. Then remove the parchment paper or foil and cut into 1 inch squares and enjoy!
